Eats: Cauliflower Soup
Tuesday, March 15, 2011 at 12:40PM I love rainy days. This weather makes me want to curl up with a big cozy blanket, drink some tea, and read a book. However, my three musketeers make it impossible to do that! Instead I get to do the next best thing, play Legos, watch cartoons, and make soup! Here is a quick recipe for a nice rainy day like today. Enjoy!
Cauliflower Soup
Cauliflower is low in fat and high in dietary fiber, folic, and Vitamin C. It is best to eat raw but on a rainy day it screams to be boiled and made into a soup.
One head of cauliflower chopped
2 carrots
1 celery
1 onion chopped
handful of baby spinach
chicken broth or vegetable stock to cover
Directions
Place ingredients in pan. Cover with chicken broth or vegetable stock. Bring to a boil and then simmer for 15 minutes. It is done when the cauliflower is soft when pierced with a fork. Drain, reserving the broth. Let it cool for a minute. Place in a blender or use a hand mixer. Puree until smooth adding the reserve broth until the desired consistency. Salt and pepper and enjoy with a slice of multi-grain country bread.
